Permalink Reply by Dom O on January 24, 2011 at 0:11 Hi Celina, the Chef Skills Advanced Plus course is a level 4 so it moves at a rapid pace and requires some good cooking skills. You should be able to work in an organised and clean manner, as well as have good knife skills - you don't need to chop at super fast chef speeds, just be confident using a knife. You will be expected to be confident working with meat, fish and poultry, for example de-boning a chicken leg or filleting a fish. You should be able to make basic sauces and reductions as well. If you are not confident on some of those things, perhaps consider moving down to the Chef Skills Plus course. If you are confident, enjoy - you will make some delicious and visually stunning food!! If you want more advice, call in and we will try and track down a chef tutor. Hope that helps.

Permalink Reply by Dom O on January 29, 2011 at 18:45 I am going on that course at the end of March. I went on the chef Skills Plus course last autumn. I loved it so much I want to try & step it up a level. I am not a chef but have an unhealthy inerest in food.
My objectives for the course are trying to get those finishing touches to look good, and to build on the development of flavours learned last time.

Permalink Reply by Celina Mann on March 11, 2011 at 6:43 Oh good, I am trying to organise a dinner party in April to show off the new skills but it is taking me ages to decide on a menu. So I am keeping an open mind about what to cook. Hoping the course will give me some ideas.
