I'm preparing the poached pear recipe we cooked a couple of weeks ago on the Knife Skills course, but using white wine instead of red, and have a question, can the pears be frozen once cooked, or will they lose their shape/form?

Yes the pears can be frozen. I would recommend freezing them on a tray. once frozen then wrap them tightly so they keep their shape!
