Hello, i am taking the recipe from the intermediate course -the pork en papillotte. I am cooking for 6 people, would you do 6 individual packets or 1 large bag for all pieces??

Chef Stuart says that it shouldn't make any real difference in cooking time, it really comes down to a presentation choice. If you are planning on opening the bag in the kitchen and carving to go on the plate (ie. your guests are not going to see it) go for the 1 large bag. If you are planning on making the bag a feature of the service (ie. guests get to open their own bag) - go for the 6 bags.
