Hi everyone,

 

I have the opportunity to get my hands on a whole centre fillet of smoked salmon (as opposed to a side) and was simply wondering if anyone could give me some ideas about special or unusual dishes to make with it.  It's oak smoked and just the small end of 500g.

 

Any and all advice will be very welcome.

This recipe is a new one on me. I've never tried it and it's going to be either mind-blowingly good, or just horrible. Could be amazing as first course of a dinner party though served in a nice big white bowl - probably not worth blowing the whole fillet on though.

Cream of Smoked Salmon Soup

Ingredients:

  • 4 cups milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 tablespoons white sugar
  • 2 cups of Smoked Salmon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

Procedure:

  • In a 3litre  saucepan, heat oil. Gradually stir in flour. Let this form a paste, or roux. Then, gradually stir in the milk and continue stirring until thickened.
  • Add your smoked salmon to white sauce mixture.
  • Add sugar, salt, pepper, and garlic powder. Mix well and simmer for 20 minutes over low heat.
  • If soup is not as thick as desired, mix a small amount of corn starch with a small amount of water and add to soup. Simmer for 10 minutes. 
Thanks, depending on what I end up doing with the rest of the fillet I'm likely to give this a try.  Until I taste it I'll remain optimistic and assume it will fall into the mind-blowingly good category.  I will update if I try it.
