Dessert Island Tasting Evenings

I held three focus group Dessert Tasting Evenings this week, Tuesday Wednesday and Thursday nights. 28 people tasted my desserts over three nights. I had a mixture of old favourites and some of my own recipes. I had two questionaires for people to complete - one before the tasting to find out what they thought of the idea of each dessert, and one to rate each dessert after tasting. Dessert Island - where there's always room for pudding

After completing my Chef's Diploma at Ashburton Cookery School last September, I returned to NZ to live after 7 years in the UK. It seemed like the perfect time for a career change, so I have given up IT Consultancy and am currently working on my businss plan for Dessert Island! No prizes for guessing what I'm planning to make and sell!

I plan to start small, using the local Farmers Market as a test market, then when I feel that I have the right product offering I will target…

Hi Mohamed, I hope you are enjoying the diploma course - I had a ball! I had never heard of Red Velvet Cake until you asked about it. I did a quick google and found loads of recipes on the net, so I'd suggest you have a good look through them until you find one that sounds like your kind of thing. Re the frosting, I'd probably go with good old butter cream. You can flavour/colour this with anything you like - I like to add a bit of cream cheese to give it a bit of a tang, but you might not want to do this if you're making a chocolate flavoured Red Velvet Cake. A good basic buttercream icing recipe is 110g unsalted butter (room temp), 60 ml milk (I use semi-skimmed), 500 g icing sugar. Beat butter, milk and half icing sugar until smooth (can take several minutes) then slowly add remaining icing sugar. If you want vanilla flavour add 1 t good quality vanilla extract at the beginning. You can substitute the vanilla for any other flavour you fancy. Add food colouring at the end, drop by drop, until you get the colour you want. Hope that helps! Good luck with the course. Are you planning to go into the food industry?

Ruth, Hi. I am taking the Diploma course now at the school and just signed up to the network. Best of luck with your career change. Do you know a good recipe for Red Velvet Cake. I had it in a boutique pastry shop inside of Bloomingdales in Dubai. It is really good. A beetroot color cake with fluffy (good tasting) icing. I got a recipe from the the www.foodnetwrok.ca where I get most of my recipes, but the icing was wrong and runny and the cake was good, but not as good as I hoped for. Any pointers.
