Best tip I learned from the chef demo - a quality indicator when selecting Sea Bass is to check the tail - if it has bites out of it, it is most likely shipped in from the middle east, where the fish are farmed so intensively they don't have enough space to swim around and end up taking bites out of each other as they swim around.
